You can make extra white sauce and use it as a topping for chicken, fish, burgers or salad dressing throughout the week. It spices anything up, and you can make it as hot or mild as you like by adding the seeds from the jalapeño. This recipe is very mild and has no seeds added.

- For The Chicken
- Oil for Sauté
- 1 lb Free Range Chicken
- ½ Onion - Chopped
- 3 Cloves Garlic
- 1 Cup Marinara Sauce
- Freshly ground Sea Salt and Pepper
- White Sauce
- 1 Cup Nancy’s plain Yogurt ( made from local small farms, no antibiotics or pesticides, and certified organic, with healthy live bacteria )
- ½ Cup Mayonnaise
- 2 Cloves Garlic – Crushed
- 1 Jalapeño – Finely Diced, scraped and seeded (add a few seeds for heat)
- ½ Lime – Juiced
- 1 tsp Cumin
- ½ tsp Chili Powder
- Freshly Ground Sea Salt and Black Pepper
- Salad
- 1 head of Lettuce - Chopped
- ¼ Cabbage - Chopped
- Onion- Chopped
- Tomato - Diced
- For The Chicken
- Step 1: Heat oil and sauté onion, chicken and garlic on low until browned 10-20 minutes.
- Step 2: Add marinara sauce, season and cook on low for 10 minutes.
- Step 3: Blend ingredients in a food processor and chill.
- For the Salad
- head of Lettuce - Chopped
- /4 Cabbage - Chopped
- Onion- Chopped
- Tomato - Diced

- Step 6: Place salad in center and top with chicken and white sauce.
- Step 8: Tuck edges and fold into burrito shape.
