Low Calorie, Gluten Free Chicken Wrap

This is a delicious lunch or dinner recipe.  low calorie and gluten free, this will hit the spot and feed your family with a healthy, nutritious meal.

You can make extra white sauce and use it as a topping for chicken, fish, burgers or salad dressing throughout the week. It spices anything up, and you can make it as hot or mild as you like by adding the seeds from the jalapeño. This recipe is very mild and has no seeds added.

You can find so many wheat free alternatives these days, there is just no need to miss out if you can’t eat gluten. People say it’s a fad, but if you have a gluten intolerance, it sure doesn’t feel like a fad.  They are best eaten fresh but I keep these in my freezer and pop one out whenever I need a quick, healthy meal.

Ingredients
  • For The Chicken
  • Oil for Sauté
  • 1 lb Free Range Chicken
  • ½ Onion - Chopped
  • 3 Cloves Garlic
  • 1 Cup Marinara Sauce
  • Freshly ground Sea Salt and Pepper
  • White Sauce
  • 1 Cup Nancy’s plain Yogurt ( made from local small farms, no antibiotics or pesticides, and certified organic, with healthy live bacteria )
  • ½ Cup Mayonnaise
  • 2 Cloves Garlic – Crushed
  • 1 Jalapeño – Finely Diced, scraped and seeded (add a few seeds for heat)
  • ½ Lime – Juiced
  • 1 tsp Cumin
  • ½ tsp Chili Powder
  • Freshly Ground Sea Salt and Black Pepper
  • Salad
  • 1 head of Lettuce - Chopped
  • ¼ Cabbage - Chopped
  • Onion- Chopped
  • Tomato - Diced
Instructions
  1. For The Chicken
  2. Step 1: Heat oil and sauté onion, chicken and garlic on low until browned 10-20 minutes.
  3. Step 2: Add marinara sauce, season and cook on low for 10 minutes.
  4. Step 3: Blend ingredients in a food processor and chill.
  5. For the Salad
  6. head of Lettuce - Chopped
  7. /4 Cabbage - Chopped
  8. Onion- Chopped
  9. Tomato - Diced
  10. How to Assemble Burrito

  12. Step 4: Heat wrap in a pan as in directions.
  13. Step 6: Place salad in center and top with chicken and white sauce.
  14. Step 8: Tuck edges and fold into burrito shape.

      hi can you tell me what the total nutritional value on these would be ? the look so yummy but am on restricted amount of calories per day thx :)

        These wrap are about 330 calories. There are 190 calories in the wrap, and less than 100 in the 4oz of chicken. If you eat half and put in lots more vegetables (saute bell pepper and onions or extra salad), you will still be full, with half the calories. I hope this helps.
