Banana, Cherry Paleo Ice-Cream

In the spirit of finding new sugar free delights, I decided to find a paleo friendly dessert, that was easy to make. I wanted something I could throw together with the things I always have available.

For most of my adulthood, since I left home at 15 to start my adventures,  the only dessert I ever made was Greek yogurt, with nuts and berries. I have never felt tired of it, but my family did not share my enthusiasm. My daughter is now fully vegan and sugar free, so it was time to make a change.

And here is the perfect recipe. I am not sure why I didn’t think of this before. It’s so simple. Just blend some frozen fruit.

Not Ice-cream, but sweet, creamy and lovely and cool in the middle of a blazing hot summer day. After 3 mouthfuls of ice-cream, my mouth is so cold I can’t taste it anyway.

So sweet and yet totally vegan, low calorie and no sugar spikes to deal with afterwards.

If you are used to eating store bought, sugar and dairy filled ice-cream, with heath bar and gooey caramel swirls, this just won’t hot the spot. But if like us, you have given up sugar and rarely ever eat dairy, this will be a creamy and sweet treat, that doesn’t make you feel swollen, achy and tired after you eat it.

Ingredients
  • 4 Large Bananas - Peeled and Frozen
  • 3 Drops Vanilla
  • ½ Cup Cherries - Frozen
  • Stevia or Agave - Optional
Instructions
  1. Freeze fruit.
  2. Blend fruit separately in a food processor.
  3. Add vanilla and gently stir the cherry into the banana. I like to keep the colors separate.
  4. Freeze again and spoon out when frozen.
