I very rarely have cheese, and when I do, it has to really count. This is one of those dishes where the gooey, chewy, salty flavor of cheese really makes the wow factor of a dish worth the calories.
I love mashed potato, but the glycemic effect does not make me feel good after eating it. I feel sluggish and so tired. So I like to substitute the spud for cauliflower. There are only 25 calories in 1 cup of cauliflower and 116 in potato. If I am going to indulge in cheese, I really don’t want all the added calories of potato. This dish is my favorite paleo alternative.
It really does taste very similar to potato and the texture is almost identical. If you want to make this dish undetectable from mash, then just add potato 4:1. 4 Cauliflower to 1 potato. It’s really quite amazing how anything so healthy and cancer fighting can taste so similar to mash.
Potato is a deadly nightshade, so is best eaten in moderation. If you have full blown arthritis then you know that potato is an irritant and you may have been told to avoid it. If that is the case for you, then this recipe is the very next best thing to a big bowl of fully loaded, freshly mashed potato.
- i Head Cauliflower - Steamed
- Ghee to taste
- Heavy Cream* - To taste
- Grated Cheese* - To taste
- Freshly Ground Sea Salt and Black Pepper
- Steam cauliflower until tender and mash, 15 minutes.
- Add extras to taste.
- Place under broil with a little grated cheese to brown.
