We Can Do Anything We Choose To Do
My latest project has been to build a ‘Kitchen Carry’ for our teardrop trailer. A tailor made wooden box with draws and cupboards for all my camping kitchen needs. I simply drew up the plans with the dimensions of the carry, Popped down to Lowes, and within the hour I was knocking up my first wooden project.

With the invention of Youtube, it seems that it’s fairly easy to learn how to do just about anything. It’s simply amazing that, with the click of a button, you can watch just about any video on just about any subject. What a delight it is to have instant access to everything in the universe. I also searched the entire US for antique brass handles and within 3 minutes I found some on Ebay. With 24 hours they were in my hand. 20 years ago I would have been scouring the antique shops for days before I found them.
Grilled Chicken with Lemon & Pineapple Salsa and Yoghurt Sauce
This is a lively, refreshing dish, bursting with flavor and perfect for a hot summer day. No need to melt by the stove, just pop the grill on. Low calorie, Paleo friendly and fairly easy to make. Pineapple Spritzer
You can also make a cool, refreshing drink with the pineapple peel. Just put the peel in a pan with spring water and gently simmer for an hour or two. The result is a sweet, fresh, clear, tasty pineapple juice without the calories. Quite delicious with ice and and a sprig of mint.
- 2 Free Range Chicken Breasts
- Coated with: Olive Oil, 1 tsp Cumin, 1 Clove Crushed Garlic, Freshly Ground Sea Salt and Black Pepper
- For the Salsa:
- 1 Organic Tomato
- ½ Cucumber
- ½ Onion
- ⅛th Pineapple
- 2-3 Sprigs Mint or Cilantro
- 2 Tbs Lemon Juice & Zest
- 2 Tbs Olive Oil
- Freshly Ground Sea Salt and Black Pepper
- For the White Sauce:
- ½ Cup Greek Yoghurt
- 2 Tbs Lemon Juice
- 1 tsp Cumin
- 2 Crushed Garlic Cloves
- Freshly Ground Sea Salt and Black Pepper
- Grill the coated chicken on high 10-12 minutes.
- Finely chop, mix and chill ingredients for salsa.
- Mix yoghurt dressing in a mason jar with a lid and chill.
- Serve chicken with salsa, yoghurt and lemon zest.
