Fast and Easy
If I want to serve something that takes me just a few minutes, but tastes totally fabulous, I serve this dish. Chop some cheese and basil, open a can of olives, crush some garlic and you are away. You can make this dish well in advance or throw it together just before you serve it. It is healthy, easy, fast and very tasty.
How to serve
You can serve it with Cucumber and Tomato salad with Low Calorie Dressing or pitta bread and sliced tomato, crackers or as a topping to a big green salad. It also makes a tasty party dish to take to a pot luck. Leave some toothpicks out so people can just stab and mingle.
Have some ready
My husband loves this salad, so I make it before we go camping. If I don’t, I get tempted to stop for something on the way back home, and it’s not always easy to find healthy, organic, fresh food outside of our kitchen. After all the hiking and fire tending and outside cooking, I just want to unpack and rest (or make something with wood), so having a meal ready is essential. - 8oz Full Fat Feta Cheese - Cubed
- 1 Can Black Olives
- 4 Cloves Garlic - Crushed
- Fresh Basil Leaves Chopped - To Taste
- 2 Tbs Olive Oil
- Freshly Ground Black Pepper
- Mix everything together and chill in an airtight container in the fridge.
