Creamy Coconut and Tomato Tofu

Ingredients
  • 16 oz Extra Firm Tofu (non GMO) - Cut into Squares
  • 4-6 Tomatoes - Chopped
  • 1 Large Onion - Chopped
  • Sauce
  • 1 inch Ginger
  • 4 Cloves Garlic
  • 1 tsp Turmeric
  • 1 tsp Garam Masala
  • 1 tsp Chili Powder
  • 1 tsp Lemon Juice
  • 1 tsp Coconut Oil
  • ½ Cup Greek Yogurt
  • ½ Cup Coconut Cream
  • Pinch Sea Salt
Instructions
  1. Saute onion in a little oil on medium for 5 minutes.
  2. Blend sauce ingredients in a food processor, leave a little chunky. If you have time, marinate the tofu in the sauce for 4 hours.
  3. Add sauce, tomatoes and tofu to onion and let cook for 20-30 minutes on medium/low.
  4. Serve the following day for optimum taste.
