Paleo Low Calorie Crunchy Cauliflower
Serves: 6-8
  • 1 Head Cauliflower - Broken into florets
  • 2 Free Range Eggs (use egg substitute for vegan)
  • 4 oz Roasted Nuts - Almonds and Cashews or your favorite
  • 1 tsp Dijon Mustard - You can use dry powder
  • Freshly Ground Sea Salt and Black Pepper
  1. In a bowl, mix eggs, mustard and season.
  2. Toss cauliflower florets in egg mix.
  3. Dip each floret into the nuts and place on a baking tray lined with parchment paper.
  4. Bake at 350F for 15 minutes.
  5. Serve with dressing of choice.
  6. Note: You will have nuts left over, but you need to be able to toss the florets easily, so you really only use 2oz of nuts.
