Day 3 - Paleo Restart

Ingredients
  • 1 Onion - Chopped
  • 1 Carrot - Chopped
  • 3 Cloves Garlic - Whole
  • 1 Butternut Squash - Peeled and Cubed
  • 1 large Sweet potato - Peeled
  • 1 bay leaf
  • 1 Can Thick Coconut Milk
  • Ghee
  • Freshly Ground Sea Salt and Black Pepper
Instructions
  1. Heat the ghee on medium and cook the onion, garlic and carrot.
  2. Add the cubed squash, bay leaf, sweet potato and milk.
  3. Cook on low until squash is tender, take out the bay leaf and blend until smooth with a hand blender. About 25 minutes.
  4. Serve hot.
