The first recipe for Bubble and Squeak was found in the early 1800’s, but it became most popular during WW2 due to rationing. It is the perfect way to use up the leftovers from a traditional roast dinner. It is just a combination of potato and greens.
This dish is so called due to the bubbling and squeaking that occurs during cooking. But it is at it’s most musical with cabbage. Cabbage seems to be more noisy than most greens for some reason. I used green beans and peas in this particular recipe, but any greens will work.

- Mashed Potato
- Greens - Green Beans, Peas, Cabbage, Spinach or Kale
- Favorite herb
- Freshly Ground Sea Salt and Black Pepper
- Chop vegetables, mix with mash and season.
- Heat a little oil in a skillet on medium and form into a patty shape.
- Cook until a golden crust allows you to flip the patty.
