Black Rice

Black rice is actually bright purple once it is cooked.  It has a uniquely nutty flavor and a chewy texture. It has more anti-oxidants than blueberries and has 18 amino acids, iron, zinc, copper and carotene. A delicious superfood.

You can cook it until it becomes thick and slightly mushy and it resembles risotto (I cook it this way when I make it with oatmeal). Or you can cook it until it is soft but still individual grains. Both ways taste the same. I cooked it on our campfire on our latest venture to the wilderness.

Cook them Carrots
Most vegetables are less nutritious the more they are cooked. This is not the case with carrots. Cooked carrots supply more antioxidants, such as beta-carotene than they do when they are eaten raw. We convert beta-carotene into vitamin A, which helps with vision, bone growth and regulating the immune system.

Steaming is the best method for preserving the nutrition, but for this recipe, we will cheat and roast them.

Fighting Prostate Cancer
Fun Fact: Cooking tomatoes actually boosts the lycopene content. Men with higher levels of Lycopene have a greater chance of fighting off prostate cancer, so make sure hubby eats plenty of marinara sauce!

With the red onion, rainbow carrots and black rice, this is a vibrantly colorful dish.  Healthy, low calorie and packed with anti-oxidants.

  • Oil for Roasting
  • 4 - 5 Rainbow Carrots - Peeled and Chopped
  • 1 Red Onion - Peeled and Chopped into ⅛
  • 1 Cup Black Rice
  • Freshly Ground Black Pepper and Sea Salt
  • 8 oz Firm Tofu - Optional - Diced and best when marinated in your favorite sauce - Bragg's, Teriyaki, Soy.
Instructions
  1. Oil for Roasting
  2. - 5 Rainbow Carrots - Peeled and Chopped
  3. Red Onion - Peeled and Chopped into ⅛
  4. Cup Black Rice
  5. Freshly Ground Black Pepper and Sea Salt
  6. oz Firm Tofu - Optional - Diced and best when marinated in your favorite sauce - Bragg's, Teriyaki, Soy.
  7. Carrots and Onion
  8. Put carrots and chunks of onion in bowl and add 1-2 Tbs oil. I like to use coconut, it's good at high temps.
  9. Add seasoning, mix and place on a baking try. Do the same with the tofu.
  10. Cook for 35-45 minutes on 400F. Make sure you turn the carrots and tofu a few times so they cook evenly.
  11. Black Rice
  12. Wash rice with vegetable soap, rinse and add to 2 Cups Spring Water.
  13. Boil for 30 minutes and serve.
