 Black Bean Salad

A low calorie, easy to make, one pot wonder. Super healthy and a total flavor explosion. You can make enough for an army and serve it as a side with different dishes throughout the week.

Make sure you de-seed and scrape the jalapeños well, or it will be fire hot. When scraped, they are just a little hotter than a bell pepper but in my opinion, much tastier.

Black Bean Salad
Serves: 6-8
  • ½ Cup Cooked Wild Rice
  • 1 (15 oz ) Can Corn
  • 1 (15 oz ) Can Black Beans
  • 1 Carrot - Grated
  • 1 Cup Tomatoes - Diced
  • 4 Green Onions - Chopped
  • 2 Tbs Diced Red Onion
  • ¼ Cup Fresh Oregano - Chopped
  • ½ Lime - Juiced
  • Splash Olive Oil
  • 2 Jalapeño Peppers - Seeded and Chopped
  • 1-2 Tbs Taco Seasoning Mix - To Taste
  • Freshly Ground Sea Salt and Black Pepper
  1. Mix all the ingredients together in a bowl and allow to sit for a few hours.
